Inspired by Puerto Rico's coast, SAL celebrates local ingredients through fire, smoke, acidity, and simplicity. We work directly with fishermen, farmers, and artisans across the island to bring the freshest flavors to your table.

Every dish tells a story of place — from the wood-fired grill that chars our snapper to the sour oranges pressed for our ceviche. This is Caribbean cuisine, reimagined through a modern lens.

Whole Red Snapper

Our most celebrated dish. A whole fresh snapper, sourced daily from local fishermen in Loíza, cooked slowly over our custom wood-fire grill until the skin is perfectly charred and the flesh remains buttery and tender.

Ingredients

Whole red snapper, sour orange, garlic, cilantro, olive oil, sea salt from Cabo Rojo

Preparation

Butterflied and brined, then grilled over white oak and Caribbean almond wood for 18 minutes

Elena Rivera

San Juan, Puerto Rico

Born and raised in Santurce, Chef Elena trained in Barcelona and Mexico City before returning home to open SAL. Her cooking bridges the gap between the island's rich culinary heritage and contemporary global technique. She believes that the best Puerto Rican food doesn't need to be complicated — it needs to be honest, seasonal, and cooked with intention.

Cooking over open flame. White oak and Caribbean almond wood impart a subtle, smoky depth to every dish that leaves our kitchen.

Each drink is a tribute to the island's rum heritage, local botanicals, and the rhythm of the coast.

Rum base. Aged rum, fresh sugarcane juice, lime, mint, crushed ice. Bright, refreshing, unmistakably Caribbean.

Smoky & briny. Mezcal, sea salt, grapefruit, rosemary, charred lemon. Evokes the Atlantic breeze at sunset.
